25 Star Balsamic Vinegar of Modena

Italy's most prized balsamic vinegar is one of our best selling products. To make 25 Star Balsamic vinegar, juice from the white Trebbiano grapes (called must) is simmered in copper kettles over wood fires for hours. The water evaporates, intensifying the flavor of the must. This must is then added to a large wooden barrel filled with previously aged balsamic vinegar where it slowly ferments.

The aroma is fragrant and bright, and the taste is intense, yet pleasantly sweet. This is one of the highest qualities of balsamic, and the perfect addition to special occasions.

25 Star White Balsamic Vinegar of Modena

In Italy, white balsamic vinegar is a condiment. Made with white Trebbiano grapes, it does not undergo the cooking and barrel aging process of other balsamic vinegars from Modena.

The result is a crisp vinegar with a touch of sweetness. Extremely adaptable, it can be used with any of our olive oils for a vinaigrette or for a marinade. The primary reason many people choose a white balsamic over a darker balsamic, is that the red or brown color may create an undesirable appearance in lighter colored dishes. The white variety is also popular when making salad dressings as it is usually not as sweet and has a milder flavor than regular balsamic vinegar. It can also be used in sauces for meat, chicken or fish or to deglaze a pan.

4 Star Balsamic Vinegar of Modena

4 Star Balsamic Vinegar represents some of the youngest balsamic made. It is typically a dark brunette color with an intense aroma of the grapes. Its pungent quality adds a balance of sweet and sour flavor to salads and grilled vegetables. It is commonly reduced over heat to create a wonderful reduction for special sauces.

6 Star White Balsamic Vinegar of Modena

Different from typical balsamic vinegar in that it has a lower acidity level and a pale color. It has a delicate balsamic flavor that compliments many fine recipes without darkening the ingredients of the dish.

8 Star Balsamic Vinegar of Modena

A superior balsamic vinegar, with a rich brown color and a slightly woody bouquet. It is quite dense and clings to the food on which it is drizzled. We recommend this product, especially with raw fruits and vegetables to bring out the fresh flavor of earth's bounty.

Suggested Uses: It is commonly served with pieces of parmigiano reggiano and taleggio cheeses, a favorite local dish in Modena.
